Recipe: Fresh Raspberry Bake

This simple dessert comes together quickly and makes the perfect ending to a cottage dinner.

Ingredients

Pastry

• 1 package frozen puff pastry, thawed
• 1 egg white, lightly beaten
• 1 tbsp caster sugar

Cream Filling

• 1 cup sour cream
• ¼ cup cream
• ½ cup brown sugar

Raspberry Mixture

• 2 cups fresh raspberries
• 1 tbsp icing sugar

Directions

1. Preheat oven to 400°F.
2. Roll out pastry onto a parchment-lined baking sheet and fold the edges to create a border. Prick with a fork and brush with egg white.
3. Chill for 30 minutes.
4. Sprinkle with caster sugar and bake for 20 minutes. Allow pastry to cool completely.
5. Whisk together sour cream and brown sugar.

• 2 tbsp fresh lemon juice

Directions

1. Melt butter and olive oil in a skillet over medium-high heat.
