A Spring Recipe from Dorota: Tuscan Coccoli (Fried Bread)
Spring also means lighter gatherings and simple recipes shared with friends.
One of my favourites comes from Tuscany: Coccoli, which translates to “cuddles.” These little pieces of fried bread dough are warm, pillowy, and traditionally served with salty prosciutto.
They originated in Florence but appear across Tuscany in many shapes and sizes. When cooked properly, the dough should be soft and slightly sticky before frying.
Ingredients

500 g all-purpose flour

15 g fresh yeast

270 ml milk

70 g butter
-
1 large pinch of salt

Seed oil for frying
Instructions

In a bowl, mix the flour and salt together.

Dissolve the yeast and add it to the bowl along with half of the milk.

Mix for about 2 minutes in a mixer.

Continue mixing for another 10 minutes until the dough becomes smooth.

Place the dough in the refrigerator and allow it to rise overnight.

The next day, remove the dough and allow it to return to room temperature and rise again.
The dough should feel soft and slightly sticky.

Heat the frying oil.

Lightly grease your hands with olive oil.

Tear small pieces of dough and place them directly into the hot oil.

Fry for a few minutes until golden.
Remove from the oil, sprinkle with salt, and add herbs if you like, rosemary or thyme are wonderful.
Serve warm with prosciutto, cheese, or simply on their own.
Try not to eat them all at once!
